Shaved Asparagus with Parmesan vinaigrette
12 large asparagus spears
1/4 cup finely grated Parmesn plus a piece for shaving
1 1/2 Tbsp fresh lemon juice
1/4 cup extra virgin olive oil
maldon salt and freshly ground black pepper
using a veg peeler, shavethe speas into long, thin shavings and place them in a bowl. In a separate bowl, add the parmesan and lemon juice and slowly whisk together with oil until well blended then season. Drizzle the vinaigrette over shaved asparagus and toss to coat then divide salad amoung plates and use peeler to shave more parmesan over salad.
